What is it?

Coconut oil comes from the fleshy part of the coconut and has a nutty flavour with a hint of coconut. They are are medium chain saturated fatty acids as opposed to the trans-saturated fats which are both longer and linked to heart disease and cholesterol issues.

The composition of coconut oil and these medium chain fatty acids means that it has a variety of positives and health benefits including:

  • It promotes weight loss by increasing the metabolic rate.
  • It Improves digestion and nutrient absorption.

Why is coconut oil great to cook with?

Coconut oil is claimed to be one of the healthiest oils to cook with. This is because it has an extremely high smoke point which means it is able to be heated to temperatures without burning or destabilising and oxidising the oil. This high smoke point means coconut oil is not only useful for regular cooking but is an excellent choice for recipes requiring high temperatures such as frying and stir-frying.

Another reason this oil is so popular is that it is this characteristic also makes it perfect to use for baking because it can be substituted for butter for those who follow a vegan diet.
